How & Why did you get into the Bar industry: In 2006 was asked to cover a shift for a friend at a local bar, I had no experience in bars of any kind but when I turned up the job I was asked to do was all about physical laber. It was Chester races and was asked to barback – somewhat a “baptism of fire” you might say. After the shift I was asked if I would do it again – i said yes and I have never looked back. I have done pretty much everything there is to do in all areas of a bar/restaurant from barback to chef and then eventually to Bar Management. Setting up the C.S.I with Jamie was a natural step after together we gained the respect of our home town and further afield through hard work and some success in Cocktail Competitions.
Your Favourite Original Drink So Far: “A Glorious Penthouse View”. This is the drink that won me a place at the 2011 Jameson Bartenders Ball. It is a twist on a Manhatten made of course with Jameson. Instead of any vermouth I used a combination of Aramatic Bitters and ‘Home-Infused’ Cigar maple syrup.
